Zucchini Patties

1 c. Bisquick 2 eggs beaten
1/2 c. shredded mozzarella or cheddar cheese 2 c. shredded zucchini
1/8 tsp. salt 2 T. chopped onion (optional)
1 T. butter or margarine
Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl. Blend well. Melt butter in a large skillet. Spoon heaping tablespoons of the zucchini mixture into the skillet. Fry for 3-5 minutes per side, until golden brown. Place browned patties on a paper towel. Makes 13 patties. These freeze well and can take out 1 or 2 at a time and heat in the microwave like pancakes. For an Italian flair, dip it in marinara sauce. To reduce calories, use cooking spray instead of butter.
