Recipe of the Week

This recipe appeared in the “Methodist Best” cookbook in 2008. The Gatesville Messenger plans to run a series of recipes from that cookbook. Black Beans

Beverly Gartman Ward

1 pkg. black beans                                       1 T. white vinegar

2/3 c. olive oil                                               salt & pepper

6 cloves pressed garlic                                ½ c. sherry

2 bay leaves                                                  cayenne pepper, oregano, and basil

1 green pepper, chopped

1 ½ stalks celery, chopped

Soak beans overnight. The next day, wash and pick out the bad ones. Place on heat in one-quart cold water, boil for one hour. Turn heat to low and add remaining ingredients, except for vinegar, sherry, cayenne pepper, oregano, and basil. Cook slowly for about four hours until the beans begin to thicken. Ten minutes before serving, add vinegar, sherry, cayenne, oregano, and basil.
